Poha is nothing but flattened rice. I attached the picture of the poha brand I used – I highly recommend it. I got it from an Indian store @ Irving. Thanks Sucheta for the recipe 🙂 We have been making this for years!
Wash the poha (I used the entire package) and drain it (not squeeze it) and let it sit (not on a strainer) for 5 minutes or so. This step softens the poha – don’t skip it. Meanwhile, chop into thin slices half of a medium onion, 1 medium potato.
In a heavy bottomed stainless steel pan, I added 1 tsp of virgin avocado oil, add 1/4 tsp each of mustard seeds, cumin seeds , urad dal, chana dal, a dash of asofetida, few curry leaves, 2 split green chilies, a good sprinkle of turmeric powder, few roasted peanuts – Roast it all well in slow flame, add onions, 3 halved garlic cloves, potatoes, 1/4 cup of frozen peas, & salt & cover it . Mix occasionally. After it all cooks well, add poha, a pinch of jaggery & required salt & lime juice & cilantro leaves. Mix it well. Let it cook a little bit covered & after a few minutes turn it off. Enjoy this simple and savory dish!!! We all love it. Do try it and let me know.
